Prawn and Asparagus Salad Recipe


Ingredients:

  • 100 gms Paneer
  • Lettuce or Watercress
  • 150 gms peeled Prawns
  • 200 gms Asparagus tips
  • Freshly ground Black Pepper
  • 4 tbsp chopped, diced Cucumber

Method:

  1. Mix the cottage cheese, prawns and cucumber together, seasoning to taste with the pepper.
  2. Lay the mixture on a bed of shredded lettuce or watercress and decorate with the asparagus tips.


Tip: To peel and devein shrimp, start by pulling off the legs. Then, remove the top shell and tail with your fingers. Hold the shrimp with the curve of the back up. Run a small paring knife down the back where the vein is visible. Slice gently, just breaking the skin. Pull out the vein with the tip of the knife. Rinse under cold water.
