- 1 Mango, diced
- Salt and Pepper
- ¼ kg Melon cubes
- 5 tbsps Mayonnaise
- Rind and juice of 1 lemon
- Chopped Mint leaves to garnish
- 350 gms Cooked, peeled Prawns
- In a large bowl mix all the ingredients except the mint leaves.
- Garnish with the mint and serve.
Tip: Prepare cold soups with degreased chicken stock.
